Homemade Elderberry Syrup

Ingredients
  • 4 cups cold water
  • 2 cups dried Elderberries
  • 1 organic Cinnamon Stick
  • 1 tsp fresh or grated ginger root
  • raw local honey
Instructions
  1. Combine the berries and herbs with cold water in a pot then bring to a boil.
  2. Reduce heat and simmer for 30 to 40 minutes.
  3. Remove from heat and mash the berries in the liquid mixture.
  4. Strain the berries and herbs through cheesecloth or coffee filter and squeeze out the juice. I use a spoon to push the liquid out of the mixture.
  5. Measure the liquid that you have and add an equal amount of honey.
  6. Heat the honey and juice on low for just a few minutes until well combined. Do not bring to a boil.
  7. Place in sterilized glass bottles..
