One of my favorite local restaurants serves a cilantro lime vinagrette salad dressing. I love it on my chicken fajita salad and decided to recreate it at home. I tried many different recipes and even mixed them up . Some were good some not so much but finally I created a delicious homemade cilantro-lime vinagrette dressing. This dressing is great on southwest salads, drizzled on tacos, on a basic salad, or off the spoon…really it is that good!
This is really easy to make and it is delicious! My kids love it when I make this, one of the reasons is that we grow our own cilantro so they get to go pick herbs for the recipe. I really feel that being a part of producing the foods make them more willing to try new things. Once they plant a seed and see it grow they are excited to try it. From back yard to salad bowl, I love it!
This cilantro-lime dressing is great served over a garden salad, fajita salad, or on a cabbage slaw. I love to pair this up with mexican food! This recipe calls for a jalapeno, don’t worry, it doesn’t turn out spicy. My kids love it and they are super sensitive to spicy foods! Of course, you could add more or less to satisfy your own tastes…have fun with it!
Here is what you need:
1 medium to small jalepeno pepper, seeded, and coarsely chopped, 2 cloves of garlic, 1/2 teaspoon minced fresh ginger root, 1/4 cup lime juice, 1/3 cup honey, 2 teaspoons balsamic vinegar, 1/2 teaspoon salt, 1/4 cup cilantro leaves, 1/2 cup extra-virgin olive oil
Here is what you do:
Place all of the ingredients in a food processor or blender. Mix for about 2 minutes. I like to chill mine in the refrigerator for a few hours before serving.
